Ingredients Needed

  • Eggs - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Unsweetened applesauce is made without the addition of any sweeteners. It is often used in baking as a replacement for oils.
  • Milk-Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
  • White sugar - Or regular granulated sugar, I do not use sugar substitutes in any of my recipes but if you know the conversions feel free to do so.
  • Vanilla extract - It is made by macerating and soaking vanilla beans in a mixture of water and Vodka. Use a good pure vanilla instead of the imitation vanilla extract.
  • Dutch-process cocoa - Is a product of cocoa beans that have been roasted, fermented, and processed to remove the fat, leaving behind a dry and bitter powder. I like Hershey's Cocoa Powder
  • All-purpose flour - is a type of wheat flour that is commonly used in cooking and baking. It is versatile and can be used for a variety of recipes, including bread, cakes, cookies, and pastries.
  • Zucchini, Zucchini - Make sure to squeeze out any excess water there might be in the zucchini. Squeeze it into a clean dishcloth and get as much liquid out as possible. Do not use paper towels because then the paper might end up sticking to the zucchini.
  • Chocolate chips (a combination of bittersweet and semisweet), save the ¼ cup for sprinkling on top of bread
  • See the recipe card below for a full list of ingredients and measurements.

How to Make Chocolate Chip Zucchini Bread

Preheat the oven to 350°F; lightly grease an 8 ½″ x 4 ½″ loaf pan.

In a large mixing bowl, beat the eggs, oil, sugar, and vanilla until smooth. Add the salt, baking soda, baking powder, cocoa, and flour, mixing until well combined. Stir in the zucchini, milk, and chocolate chips. Pour the batter into the prepared pan.

Bake the bread for 65 to 75 minutes, until the loaf tests are done (a toothpick or cake tester inserted into the center will come out clean, save for perhaps a light smear of chocolate from the melted chips).

Remove the bread from the oven, and let it cool for 10 to 15 minutes before turning it out of the pan onto a rack. Cool completely before slicing; store well-wrapped, at room temperature.

Variations to Try

  1. Walnuts or pecans: Adding chopped nuts to your zucchini bread will give it a delicious crunch and nutty flavor.
  2. Raisins or dried cranberries: These sweet and chewy fruits can add a burst of flavor to your bread.
  3. Chocolate chips: If you have a sweet tooth, adding chocolate chips to your zucchini bread can make it taste even more like a treat.
  4. Spices: Cinnamon, nutmeg, and ginger are all great spices to add to zucchini bread. They'll give it a warm and cozy flavor.

Use 1/2 cup of oil and it should still be fine. I switched to applesauce to help lower the WW points for the recipe but feel free to use oil too. Thanks.
