What is Scrapple?

Made from scraps of pork meat (essentially a mush of pork scraps), and combined with cornmeal and spices- Scrapple is a delicious loaf of goodness, created by the Pennsylvania Dutch, and is a popular breakfast staple in the Philadelphia, PA area, as well as in surrounding counties.

Reminiscent of liverwurst in flavor profile, is tastes great cooked to golden brown over medium heat in a non-stick skillet (or fried, as many local greasy spoons are apt to do), is a great accompaniment to your morning eggs, or the perfect star of your weekend breakfast sandwich. While scrapple has been around for quite some time, when it comes to cooking scrapple, it seems almost the perfect product to air fry. It comes out perfectly crisp every time!

Where to buy Scrapple

If you’re in Philly, there I also recommend you go toReading Terminal MarketorRieker’s Prime Meats! My favorite brand of Scrapple is Habbersett- which can be found in most local Philly supermarkets. In my humble opinion, they don't call it "Philadelphia's favorite" for nothing. It's the Scrapple brand I've been eating since I was a wee Sharon, and it's delicious.

Prepping the Scrapple

To make the Scrapple in the air fryer, you'll start by slicing it down evenly. I like my Scrapple a bit on the thinner side, so I slice it into roughly ¼" thick slices. This will yield 14 slices from a 1 pound brick of Scrapple. I recommend only cooking 6 slices or so at a time in your air fryer, so they are not overcrowded and don't stick together.

You can make as little or as much Scrapple as you like, so long as you work in batches.

Cooking the Scrapple

To cook the Scrapple, layer the scrapple slices in one even layer in the air fryer, and set the air fryer to 400 degrees for 10 minutes. After 10 minutes, flip the scrapple over, and cook for an additional 3 minutes.

Tips for making Scrapple in the air fryer

  • Be sure to slice the Scrapple evenly, so it all cooks at the same time.
  • Don't disturb the Scrapple to early or try to flip it too soon, When Scrapple is cooking, it is very loose and fragile before it crisps, and flipping it too early will cause it to fall apart.
  • If you like a thicker slice of Scrapple, adjust your cooking time a bit to let it cook through and become crisp.

Frequently Asked Questions about Scrapple in the air fryer

Do I need to grease the air fryer before cooking the Scrapple in the air fryer?

Nope! Scrapple has a decent fat content, and when cooked, it is similar to bacon in the fact that it doesn't need any additional fat to keep from crisping or sticking.

What it I want to cut my Scrapple slices thicker?

If you prefer a thicker slice of Scrapple, you'll need to bump up your cooking time a bit to ensure that its crispy. This recipe calls for ¼" thick slices. f you want to go up to 1.2" thick scrapple slices, I would recommend you go to about 15-20 minutes, rather than the 13 minutes required for this recipe.

Do I need to preheat the air fryer?

Nope! Just add the Scrapple in an even layer with no overlapping pieces, and follow the cooking directions!

How do I store leftover cooked or uncooked Scrapple?

To store cooked Scrapple, place in an airtight containerin the refrigerator for up to 4-5 days. The same rule applies to uncooked scrapple, except it keeps up to 1 week in the refrigerator (wrapped tightly in plastic wrap or in a resealable bag). For best flavor and consistency, I recommend only cooking what you need at the time, and storing the rest uncooked until ready to eat. You can also freeze Scrapple, but it will be a bit drier and crumbly once thawed.

What to serve with Scrapple?

Scrapple can be served like just about any other breakfast meat, such as bacon, pork roll, sausage, or turkey bacon. You can serve it with eggs and toast, alongside pancakes, or as part of a breakfast sandwich. One of my favorite recipes to cook with Scrapple is Creamed Chipped Scrapple.

You can serve Scrapple with some traditional Pennsylvania Dutch dips, like apple butter, jelly or maple syrup. I prefer just a touch of ketchup.
