  • 2 cups water
  • 2 small carrots, sliced
  • 1 medium potato, cubed
  • 34 cup fresh green peas or 3/4 cup frozen green pea
  • 1 cup cut fresh green beans or 1 cup frozen green beans
  • 14 small cauliflower, separated into florets
  • 2 ounces fresh spinach, cut up (2 cups)
  • 2 cups milk
  • 2 tablespoons all-purpose flour
  • 14 cup whipping cream
  • 1 12 teaspoons salt
  • 18 teaspoon pepper
  • 2 tablespoons snipped dill weed or 2 tablespoons parsley

  • Heat water, carrots, potato, peas, beans and cauliflower to boiling in 3-quart saucepan; reduce heat. Cover and simmer until vegetables are almost tender, 10 to 15 minutes.
  • Add spinach; cook uncovered about 1 minute. Mix 1/4 cup of the milk and the flour; stir gradually into vegetable mixture. Boil and stir 1 minute.
  • Stir in remaining milk, the whipping cream, salt and pepper. Heat just until hot. Garnish each serving with dill weed.

  1. This worked well both for my BF and me. Fresh dill put it over the top. We used low-fat milk and light cream. Instead of 1 cup milk we subbed 1 cup broth. BF ate some leftovers, a sure sign of a great recipe!

  2. I just made this. It's great! I am not a soup person, normall, but I do love anything creamy ;-) I actually thought the soup might be boring and bland. I'm glad I was wrong! I followed the recipe exactly, with the exception of the cauliflower. I left that out. I'm eating it with ciabata dinner rolls.

  3. What a fantastic recipe! I believe this is my new favorite comfort food. It's simple, uses lots of fresh veggies, is hearty and oh so flavorful. In my climate, this would be more of a fall vegetable soup, and I look forward to making it then with the veggies from my garden. Made for Mike and the Appliance Killers ZWT9.

  4. Oh Yes!! Seriously good soup Made as directed, but I didn't have fresh dill or fresh parsley so sprinkled over a little dried dill. Such a nice quick recipe with delicious results. Made an excellent Friday night meal served with a slice of toasted Recipe #483225. Simply scrumptious. And there is even enough left over for lunch the next day. Made for Aussie / Kiwi Swap Sept 2012.

  5. I loved all of the veggies in this soup! Overall, I thought the soup was good. I thought it needed some more flavor, though. I'm sure the addition of some more herbs would help me to like it better. I really loved the spinach addition. Thanks for posting. Made for the Soup-A-Stars during ZWT9

  1. This looks really good, and although I have not yet tried it, I would imagine more herbs and seasonings would be nice. This seems more of a fall soup to me, than a summer soup...

  2. This soup will work with any vegetables except maybe tomatoes. I have used rutabaga and parsnips in it on occasion. The veggie broth instead of water is good but not true Finnish Summer Soup with that. No other herbs are really needed. Just make sure you use enough dill. I always add more than the recipe calls for. We eat it with Finnish grill cheese or salmon and Finnish rye bread. And don't forget to add a pat of butter to your bowl before you eat it.

  3. This was really lovely, and perfect for using the end-of-summer harvest on this night when fall seems around the corner. I did use vegetable broth instead of water, and used skim milk. I used broccoli instead of cauliflower as well, but this recipe is versatile enough that any of your favorite veggies (or whatever is languishing in your fridge) will work perfectly.
